Ingredients

  • 450 g sweet potato
  • 1½ tsp chili powder
  • 1 garlic clove
  • 3 tbsp tahini
  • juice of ½ lime
  • 1 tsp maple syrup
  • ½ tsp cinnamon
  • 1½ tsp ground cumin

How to Make It

  • Preheat the oven to 200°C. Peel the sweet potatoes and cut into 2x2 cm pieces.
  • Spread on a parchment-lined baking tray, sprinkle with chili powder, drizzle with olive oil, and roast for 45 minutes.
  • Cool slightly, then blend with garlic, tahini, lime juice, maple syrup, cinnamon, and cumin until smooth. Thin with olive oil or water if needed. Adjust seasoning with extra lime, salt, or tahini.
  • Transfer to a clean jar and refrigerate. It keeps for at least a week.
  • Tip: Flavors deepen after a few hours in the fridge.
