The Real Coconut Curry Recipe at a Smart Price!

A good coconut curry in Thailand is a bit like a good pot-au-feu with us.

There are as many exotic recipes as cooks in Asia.

I reveal here my version of chicken curry with coconut.

But shhh... that stays between us because, at €1.80 per person, I wouldn't want anyone stealing my secret!

To vary the pleasures, I can replace the chicken with beef, duck or even white fish, such as cod.

Each of these ingredients goes very well with coconut milk and cilantro. I admit that I have a preference for cod.

The Real Coconut Curry Recipe at a Smart Price!

Ingredients for 4 people

- 2 chicken cutlets

- 3 carrots

- 1 bunch of 30 g fresh coriander to chop

- 1 stirred yogurt

- 1 carton of 200 ml coconut milk

- 250 g of basmati or Thai rice

- 1 jar of green curry paste

- 2 tablespoons of Nuoc Nam

- 1 pinch of paprika

- 1 teaspoon of curry

- Peanut or sunflower oil

How to

1. I cut the cutlets into strips and I slice the onion.

2. I'm preparing a julienne of carrots.

3. In a bowl, I mix yogurt, nuoc mam and a tablespoon
green curry coffee.

4. I brush my meat with this mixture and let it marinate
in a salad bowl while preparing the rest.

5. In a wok, sauté the chopped onions over medium heat.
and carrot julienne with a drizzle of olive oil for 5
min.

6. I then throw my thin strips of marinated chicken into the
wok and brown them with the vegetables for 10 minutes, still on high heat
medium.

7. Meanwhile, I start cooking the basmati rice in
a pot of salted boiling water. For it to become sticky I
cover my pan with a lid.

8. I baste the meat and the vegetables with the coconut milk, I add
a pinch of curry and a pinch of paprika and simmer 2
min in the wok.

9. I place a few chopped fresh coriander leaves on
my pretty dish.

Result

There you go, the coconut curry chicken is already ready :-)

Simple, practical and delicious!

Plus, it's a really cheap recipe that everyone loves.

Now all you have to do is enjoy your curry with sticky rice!

Bonus tip:sticky rice WITHOUT rice cooker

Sticky rice goes perfectly with a Thai chicken curry.

Just because we're not at the restaurant, doesn't mean we're going to settle for white rice with this delicious green curry.

I don't have a rice cooker, but that doesn't stop me from making really good sticky rice.

For this, buy glutinous rice in a bag in a Thai store if you cannot find it in the supermarket.

Start by getting rid of the starch:pour the rice in lukewarm water and mix. Empty the water and repeat until the water becomes translucent.

Steam the rice by placing it in a colander over your pan filled with water if you don't have a steamer.

Taste regularly, in 20 min the rice should be ready and sticky to perfection.

- 2 chicken cutlets:300 g at €9.48 per kilo, i.e. €2.84
- 3 carrots:375 g at €1.50 per kilo, i.e. €0.56
- 1 bunch of fresh coriander:30 g at €20.56 per kilo, i.e. €0.62
- 1 stirred yoghurt:125 g at €1.14 per kilo, i.e. €0.14
- 1 brick of coconut milk:200 ml at 4.25 per liter or €0.85
- 250 g of rice:€2.22 per kilo, i.e. €0.56
- 1 jar of green curry paste:115 g at €11.30 per kilo, i.e. €1.30
- 2 tablespoons of Nuoc Mam:30 ml at €11.68 per liter or
€0.35
