- 4 chicken cutlets
- 12 green olives (or black, your choice!)
- 30g sun-dried tomatoes
- 1 teaspoon of olive oil
- A little parsley
- 1 lemon
- Salt and pepper
1. In a bowl, coarsely mix the olives, tomatoes, and parsley. Drizzle with a few drops of lemon juice.
2. Slash each cutlet diagonally and top with the mixture.
3. Arrange in a microwave-safe dish.
4. Cover with cling film and microwave at 850 Watts for 10 minutes.
5. Stir well, then cook at 250 Watts for another 10 minutes.
6. Let rest briefly, then serve hot!
If cutlets are thick, slice lengthwise to double portions easily. As a dedicated food enthusiast, I also brush extra filling on the meat for added flavor!
