- 20 grams liquid cream
- 5-6 basil leaves
- 100 grams mascarpone (like Galbani from the cheese aisle)
- 100 grams whipped cream
- 3 tomatoes
- Bacon bits

1. Blend basil leaves with liquid cream, then mix in mascarpone. Whisk until smooth.
2. Season with salt and pepper.
3. Whip the whipped cream and fold into the mascarpone-basil mixture.
4. Chill in the fridge for about 2 hours.
5. Dice the tomatoes and layer into small glasses or yogurt pots.
6. Spoon on a rosette of chilled mousse, top with pan-fried bacon bits and a basil leaf for garnish.
7. Serve chilled. They'll keep in the fridge until guests arrive.
