Mozzarella Tomato Gratin: Easy Budget Recipe Under €1 Per Serving

Each week, I share a delicious, wallet-friendly recipe perfect for home cooks. Today: Mozzarella Tomato Gratin, at less than €1 per person!

Ingredients (Serves 4)

  • 8 firm, ripe red tomatoes
  • 300g mozzarella
  • Basil and thyme leaves
  • Olive oil, salt, and pepper

Preparation (Total Time: ~35 Minutes)

Prep takes just 5 minutes:

  1. Preheat oven to 200°C.
  2. Slice tomatoes and mozzarella into thin 0.5cm slices—thinner is better!
  3. Drain tomatoes well, season with salt and pepper.
  4. Lightly oil a gratin dish to prevent sticking.
  5. Build a mille-feuille by alternating tomato and mozzarella slices, ending with cheese. Add basil, thyme, and a drizzle of olive oil.
  6. Bake for 30 minutes, then 5 minutes under the grill for a golden top.
