Ingredients (Serves 4)
- 8 firm, ripe red tomatoes
- 300g mozzarella
- Basil and thyme leaves
- Olive oil, salt, and pepper
Preparation (Total Time: ~35 Minutes)
Prep takes just 5 minutes:
- Preheat oven to 200°C.
- Slice tomatoes and mozzarella into thin 0.5cm slices—thinner is better!
- Drain tomatoes well, season with salt and pepper.
- Lightly oil a gratin dish to prevent sticking.
- Build a mille-feuille by alternating tomato and mozzarella slices, ending with cheese. Add basil, thyme, and a drizzle of olive oil.
- Bake for 30 minutes, then 5 minutes under the grill for a golden top.
