Budget-Friendly Christmas Starter: Potato Toasts with Asparagus and Smoked Salmon

Looking for an affordable yet impressive Christmas starter to share with family? Try these potato toasts topped with asparagus and smoked salmon—a simple, delicious option I've perfected for holiday gatherings.

With just 9 days until Christmas, finalizing your menu is key. If you're short on starter ideas, these potato toasts are a game-changer: crispy, flavorful, and easy to prepare.

Ingredients (for 24 pieces):

- 6 large potatoes

- 4 slices of hamburger cheese

- 4 slices of smoked salmon

- 24 thin green asparagus

- A few lettuce leaves

- Juice of 1 lemon

- Coarse salt

- A few sprigs of dill

Preparation:

1. Prepare the potatoes and asparagus

Wash and dry the potatoes, then slice each into 4 slices 3 cm thick. Arrange in an oven-safe dish, sprinkle with coarse salt, and bake for 15 minutes. Meanwhile, wash and chop the dill.

Clean the asparagus and blanch in boiling salted water for 2 minutes. Shock in ice water to halt cooking, then drain.

2. Assemble the toasts

Cut each slice of smoked salmon into four equal parts and toss with lemon juice.

From each cheese slice, cut six rectangles. Once potatoes are baked, remove from oven and top half the slices with cheese rectangles to melt slightly.

Build each toast with lettuce leaves, 4 green asparagus spears, a potato slice, and a salmon piece. Finish with a sprig of dill and serve warm.
