Rinse the apricots, pat dry, halve them, and remove the pits.
Pour the linden honey into a 28 cm non-stick pan along with the cinnamon or vanilla powder. Add the apricots and cook over high heat for 3 minutes, stirring occasionally, until they begin to caramelize.
Stir in the lemon juice and linden essence. Serve warm.
