Authentic Lamb Tagine with Dried Apricots: A Moroccan Masterpiece

Ingredients

  • 1 kg lamb shoulder, cut into pieces
  • 2 onions
  • 20 cl water
  • 2 tomatoes
  • 200 g dried apricots
  • 1 tbsp fresh coriander, chopped
  • 2 tbsp olive oil
  • 2 tbsp honey
  • Pinch of ground ginger
  • 1 tsp ground cinnamon
  • Salt and pepper, to taste

Instructions

  • Heat the olive oil in a tagine or heavy casserole over medium heat. Brown the lamb pieces, then add peeled and sliced onions, seasoning with salt and pepper.
  • Add water, cover, and simmer on low heat for 45 minutes, stirring occasionally.
  • Halve the tomatoes, remove seeds and excess moisture, then quarter them.
  • Drain some cooking liquid, then stir in apricots, tomatoes, honey, ginger, and cinnamon.
  • Simmer uncovered for another 15 minutes to meld the flavors.
  • Transfer to a preheated serving dish or tagine, garnish with fresh coriander, and serve with fluffy couscous.
