Ingredients
- 1 kg lamb shoulder, cut into pieces
- 2 onions
- 20 cl water
- 2 tomatoes
- 200 g dried apricots
- 1 tbsp fresh coriander, chopped
- 2 tbsp olive oil
- 2 tbsp honey
- Pinch of ground ginger
- 1 tsp ground cinnamon
- Salt and pepper, to taste
Instructions
- Heat the olive oil in a tagine or heavy casserole over medium heat. Brown the lamb pieces, then add peeled and sliced onions, seasoning with salt and pepper.
- Add water, cover, and simmer on low heat for 45 minutes, stirring occasionally.
- Halve the tomatoes, remove seeds and excess moisture, then quarter them.
- Drain some cooking liquid, then stir in apricots, tomatoes, honey, ginger, and cinnamon.
- Simmer uncovered for another 15 minutes to meld the flavors.
- Transfer to a preheated serving dish or tagine, garnish with fresh coriander, and serve with fluffy couscous.
