Tatin with chestnut honey and brown sugar

Pour the flour into a bowl, make a well in the center and break the egg into it. Add salt, sugar and soft butter. Mix with your fingertips to obtain a paste. Let it rest for 30 minutes in the refrigerator in cling film.

Peel the apples, core them and cut them into thick slices. Preheat the oven to th. 7 (210°C).

In a springform pan, melt the honey over low heat with the butter. Remove from the heat and arrange the apple quarters in the bottom of the mold over the honey. Return to the heat over low heat and cook without stirring until the apples caramelize slightly.

On a floured work surface, roll out the dough into a disc slightly larger than the diameter of the pan. Place the disc of dough on the apples. Tuck the edges of the dough inside the pan. Prick the dough with a fork.

Bake for 25 minutes in the oven.

Unmold and enjoy hot with fresh cream.
