Decadent Tarte Tatin with Chestnut Honey and Brown Sugar

Ingredients for 6
  • For the dough:
    250 g flour
    100 g soft butter
    100 g brown sugar
    1 egg
    1 pinch fine salt
  • For the topping:
    2 large red apples
    200 g chestnut honey
    50 g butter

Pour the flour into a bowl and create a well in the center. Crack the egg into the well, add the salt, brown sugar, and soft butter. Gently mix with your fingertips to form a smooth dough. Wrap in cling film and chill in the refrigerator for 30 minutes.

Peel, core, and slice the apples into thick pieces. Preheat the oven to 210°C (gas mark 7).

In a springform pan, melt the chestnut honey over low heat with the butter. Remove from heat, arrange the apple slices in the bottom over the honey, then return to low heat. Cook gently without stirring until the apples lightly caramelize.

On a floured surface, roll the dough into a disc slightly larger than the pan. Place it over the apples, tucking the edges inside the pan. Prick the dough with a fork.

Bake for 25 minutes. Unmold while hot and serve with fresh cream for an irresistible treat.
