Refreshing Fresh Fruit Carpaccio with Orange Blossom and Chestnut Honey Glaze

Ingredients (Serves 4)
  • 1 small melon
  • 400g watermelon
  • 2 nectarines
  • 2 kiwi fruits
  • 2 oranges
  • 4 tablespoons chestnut honey
  • 1 sachet vanilla sugar
  • 1 tablespoon orange blossom water
  • A few mint leaves

Preparation: 20 minutes
  1. Peel the melon and watermelon, remove the seeds, and slice the flesh thinly. Wash and dry the nectarines, halve them, remove the pits, and cut into thin strips. Peel the kiwis and slice them thinly lengthwise.
  2. Arrange all the fruit slices on a large platter or individual plates for 4 servings.
  3. In a bowl, whisk together the juice of the 2 oranges, chestnut honey, vanilla sugar, and orange blossom water to create a fragrant glaze.
  4. Drizzle the glaze generously over the fruit.
  5. Refrigerate until ready to serve, then garnish with fresh mint leaves.
