Creamy Rice Cake with Silky Chocolate-Orange Sauce

Ingredients for 3 servings

The cake:

  • 100g rice
  • 0.5L milk
  • ½ vanilla pod
  • 60g sugar
  • 1 egg
  • 1 tbsp fresh cream
  • A pinch of salt
  • A few drops of orange blossom

The sauce:

  • 100g couverture chocolate
  • 1 orange
  • 1 knob of butter
  • 1 tbsp orange liqueur

Preparation

Cook the rice for 3 minutes in 3 liters of boiling water, then drain.

Meanwhile, boil the milk with the pinch of salt and split vanilla pod.

Add the drained rice to the boiling milk. Cover and cook over very low heat until the rice absorbs all the milk (about 45 minutes). While cooking, beat the egg whites until stiff.

Once the rice is cooked, stir in the sugar, egg yolk, beaten egg whites, fresh cream, and a little grated orange zest. Pour into a mold and bake in a hot oven for 15 minutes.

For the sauce, break the chocolate into pieces and melt over low heat with the orange juice, butter, and orange liqueur.

Serve the warm cake topped with the chocolate sauce.
