Poké Tacos Recipe: Fresh Sushi-Style Tacos for Home Cooks

Ingredients:

180g sushi rice
120g sushi-quality salmon
3 sheets of nori
½ avocado
½ jalapeño
90g chuka wakame (seaweed salad)
3 tsp black/white sesame seeds

Marinade ingredients:

1 tbsp soy sauce
1 tbsp sesame oil
1 tbsp apple cider vinegar
1 tbsp water
1 tsp sriracha
1 tsp mirin
6 rings of red pepper

Instructions:
1. Cook the sushi rice per package directions. Dice the salmon into 1x1cm cubes using a sharp knife.
2. Whisk together soy sauce, sesame oil, apple cider vinegar, water, sriracha, and mirin in a bowl.
3. Finely chop the red pepper rings and stir into the marinade. Let it infuse for optimal flavor.
4. Combine the marinade with the salmon cubes in a bowl, ensuring even coating.
5. Cover and refrigerate for 10 minutes.
6. Cut six 10cm-diameter circles from the nori sheets.
7. Dice the avocado and slice the jalapeño.
8. Spread a thin layer of sushi rice on each nori circle using the back of a spoon.
9. Add 15g wakame to each, followed by 15g marinated salmon and a few jalapeño slices.
10. Finish with a sprinkle of black and white sesame seeds.
