Ingredients:
1 pound sirloin steak, cut 1-inch thick
1/2 small red onion, cut into 1-inch chunks
1 small yellow pumpkin, cut in half lengthwise and then crosswise into 1-inch slices
1 small red or green bell pepper, cut into 1-inch pieces
Mushroom Wild Rice (recipe follows)
Marinade:
2 tbsp water
2 tbsp red wine vinegar
2 tbsp coarse-grain Dijon mustard
2 cloves garlic, minced
2 tsp vegetable oil
1/2 tsp coarsely ground black pepper
Preparation:
Cut sirloin steak into 1-inch pieces. In a small bowl, whisk together marinade ingredients. Place steak pieces and marinade in a resealable plastic bag. Seal tightly and marinate in the refrigerator for 6 hours or overnight.
Soak eight 10-inch skewers in water for 10 minutes; drain. Remove steak from marinade, discarding the marinade. Thread steak, onion, pumpkin, and bell pepper evenly onto skewers. Grill kebabs on a preheated grill or grill pan over medium-high heat for 8 to 10 minutes, turning occasionally, until steak reaches desired doneness.
Mushroom Wild Rice
Heat 2 tsp vegetable oil in a large nonstick skillet over medium heat until hot. Add 2 cups thinly sliced mixed wild mushrooms; cook and stir until tender, about 5 minutes. Remove from heat and keep warm. Meanwhile, prepare 7 ounces (200 grams) long-grain and wild rice mix according to package directions. Stir in the cooked mushrooms.
Serve the kebabs over mushroom wild rice for a complete, satisfying meal.
