Salmon and Grain Salad Bowl

400 grams salmon
2 tablespoons paprika, divided
Salt, to taste
Pepper, to taste
15 grams chickpeas
2 tablespoons olive oil
200 grams mixed vegetable salad
250 grams red quinoa, cooked
150 grams cherry tomatoes
2 tablespoons Ranch Dressing
Preparation
Preheat the oven to 180°C. Sprinkle the salmon with 1 teaspoon paprika; season with salt and pepper. Bake on a lined tray for 15 minutes, or until cooked to your liking.
Combine chickpeas with olive oil and remaining paprika in a bowl; season with salt and pepper to taste. Spread on a lined baking sheet and bake at 200°C for 30-40 minutes.
Layer mixed vegetable salad in bowls. Top with quinoa, chickpeas, salmon, and cherry tomatoes. Drizzle with ranch dressing.
