Cooking with mushrooms

Mushrooms are bursting with vitamins and minerals and you can prepare them in all kinds of ways.

In the December issue of Santé you will find some delicious recipes with mushrooms. Why is it a good idea to cook with it? For example because…

  • Mushrooms are full of fiber and vitamin B minerals such as potassium, phosphorus, copper iron. If you bake about one hundred grams of mushrooms, you already take with you thirty percent of the amount of copper you need in a day.
  • Research by the University of Florida shows that eating a portion of Japanese shiitakes every day for at least four weeks strengthens their immune system. The secret is said to be in the beta-glucans, which are also found in traditional Dutch white mushrooms.
  • Don't want to eat meat? Meat and fish cannot be completely replaced by mushrooms, the protein content is too low for that. So supplement with other protein sources such as legumes, nuts or eggs.
