Ingredients

Mixed Mushrooms

  • 500 g mixed mushrooms
  • 2 tbsp oil
  • 1 bag Santa Maria Taco Seasoning Mix
  • Chipotle Cabbage
  • 200 g red cabbage
  • 2 tbsp olive oil
  • 1 lime, juice only
  • 1 tsp salt
  • 1 tbsp chipotle sauce

Extras

  • 1 pack Santa Maria Tortilla Original Small (8-pack)
  • 100 g salad cheese
  • ½ bunch coriander

Preparation Method

  • Sauté mushrooms in oil until softened, without browning.
  • Stir in the Seasoning Mix and cook for 1 more minute.
  • Finely chop red cabbage and toss with olive oil, chipotle sauce, lime juice, and salt.
  • Warm tortillas by grilling or microwaving.
  • Layer chipotle cabbage and mushrooms on tortillas, top with cheese and coriander.
