Deliciously Ella's Vegan Key Lime Pie: Creamy Avocado No-Bake Recipe

Serves 10-12 people.

Ingredients for the base:
– 2 cups almonds (400 g)
– 30 Medjool dates (600 g), pitted
– 2 tbsp coconut oil

Ingredients for the filling:
– 5 very ripe avocados
– Juice of 3 limes (30 ml)
– ¾ cup maple syrup (225 ml)
– 4 tbsp coconut milk (use the solidified cream from the can)
– 1 lime, for zesting

Make the base:
Process the almonds in a food processor for about 1 minute until chopped into small pieces (not as fine as flour).

Add the dates and coconut oil, then process until the dates are finely ground and the mixture is sticky.

Press the mixture firmly into the bottom of a 20-25 cm springform pan using a spatula—aim for a 2-3 cm thick, compact base. Set aside.

Make the filling:
Scoop the avocado flesh, discarding pits, and add to the food processor. Include lime juice, maple syrup, and coconut milk. Process until smooth and creamy.

Pour over the base and freeze for about 1½ hours to set (it should firm up but not fully freeze). Grate the zest of the remaining lime over the top before serving.

Pro tip:
Ensure the avocados are vibrant green inside. Any brown spots will dull the pie's beautiful bright green color, turning it swampy!
