Ingredients
(Serves 4)
- 200 g sugar
- 3 tbsp cornflour
- 1/8 tsp salt
- 500 ml soy milk
- 1 tsp vanilla extract
- Red fruit for garnish

How to Make It
- In a large saucepan, whisk together the sugar, cornflour, and salt.
- Gradually whisk in the soy milk until smooth, preventing lumps. Heat over low, stirring constantly until thickened. Simmer 2-3 more minutes, stirring occasionally.
- Remove from heat, stir in vanilla extract. Cool for 10 minutes, stirring now and then.
- Pour into a large serving bowl or individual dishes. Refrigerate 2-3 hours to set.
- Garnish with red fruit just before serving.
