Easy Homemade Vegan Vanilla Pudding: Annemiek s Packet-Free Recipe

Ingredients

  • 200 g sugar
  • 3 tbsp cornflour
  • 1/8 tsp salt
  • 500 ml soy milk
  • 1 tsp vanilla extract
  • Red fruit for garnish

How to Make It

  • In a large saucepan, whisk together the sugar, cornflour, and salt.
  • Gradually whisk in the soy milk until smooth, preventing lumps. Heat over low, stirring constantly until thickened. Simmer 2-3 more minutes, stirring occasionally.
  • Remove from heat, stir in vanilla extract. Cool for 10 minutes, stirring now and then.
  • Pour into a large serving bowl or individual dishes. Refrigerate 2-3 hours to set.
  • Garnish with red fruit just before serving.
