Ingredients
For about 8 bars
- 150 g mixed nuts (unsalted)
- 150 g dried cranberries
- 16 pitted dates
- Zest of ½ lemon
- 1 tsp coconut flakes
Equipment needed: Hand blender (a food processor or blender works even better, though Annemiek makes these in her caravan without one)

Instructions
- Coarsely chop the nuts with a knife.
- Place the cranberries and dates in a tall bowl and blend with a hand blender until sticky.
- Add extra dates if needed for more stickiness.
- Incorporate the nuts and remaining ingredients, kneading thoroughly.
- Line a square tin with baking paper, add the mixture, top with another sheet, and press firmly.
- Freeze for 30 minutes to set.
- Cut into strips, wrap each in baking paper with a rubber band, and store in a ziplock bag for rides.
Tip: These bars keep in the freezer for at least three months.
