As a Santé journalist and avid cyclist, Annemiek knows the value of quick, nutritious snacks on the road. Riding her bike regularly, she developed this simple recipe for energy-packed sports bars—perfect for sustaining your rides.

Ingredients

For about 8 bars

  • 150 g mixed nuts (unsalted)
  • 150 g dried cranberries
  • 16 pitted dates
  • Zest of ½ lemon
  • 1 tsp coconut flakes

Equipment needed: Hand blender (a food processor or blender works even better, though Annemiek makes these in her caravan without one)

Instructions

  • Coarsely chop the nuts with a knife.
  • Place the cranberries and dates in a tall bowl and blend with a hand blender until sticky.
  • Add extra dates if needed for more stickiness.
  • Incorporate the nuts and remaining ingredients, kneading thoroughly.
  • Line a square tin with baking paper, add the mixture, top with another sheet, and press firmly.
  • Freeze for 30 minutes to set.
  • Cut into strips, wrap each in baking paper with a rubber band, and store in a ziplock bag for rides.

Tip: These bars keep in the freezer for at least three months.
