Ingredients for Aubergine Boats

  • 1 pack of Pulled Oats® Tomato
  • 2 aubergines
  • 200 g fresh spinach
  • 2 garlic cloves
  • 2 mozzarella balls, 125 g each
  • 250 g cherry tomatoes
  • Fresh basil
  • Salt
  • Black pepper
  • Oil

How to Make Aubergine Boats

1. Preheat the oven to 200°C.
2. Wash the aubergines and slice lengthwise into 1 cm thick pieces.
3. Brush both sides with oil, season with salt and pepper, and bake for 15 minutes.
4. Sauté spinach with minced garlic in oil. Stir in Pulled Oats and cook 1-2 minutes. Slice cherry tomatoes and mozzarella. Top the aubergine slices and bake 10-15 minutes until tender.
5. Finish with fresh basil, a sprinkle of salt, and black pepper.
