This couscous salad is delicious and straightforward to make. The couscous simply soaks while you prepare the other ingredients.
Serves 2-3
1. Bring water to a boil for the couscous. Stir in the vegetable stock cube, turmeric, paprika, and honey. Add the couscous and a drizzle of olive oil. Remove from heat, cover, and let stand for 5-7 minutes.
2. Heat olive oil in a frying pan. Sauté diced onion with garam masala and Ras El Hanout. Add Pulled Oats, increase heat, and cook for 2 minutes.
3. Chop the dates, apricots, kale, and herbs.
4. Combine the Pulled Oats mixture with dates, apricots, chickpeas, kale, herbs, and pomegranate seeds.
5. Serve with tzatziki and flatbread.
