Why Cooking Pasta in a Small Pan Leads to Sticky Results

Resist the temptation to cook pasta in a pan that's too small.

Adding pasta to a limited volume of water causes a sharper drop in temperature compared to using more water. This delays the return to a rolling boil. Meanwhile, the pasta settles on the bottom, promoting stickiness. An imbalanced pasta-to-water ratio only worsens the problem, as experts in Italian cooking emphasize.
