Preheat the oven to 180°C. Sift 5 tbsp flour, 1 tbsp potato starch, ¼ sachet yeast, 1 tsp vanilla powder, 2 tbsp unsweetened cocoa, and 4 tbsp powdered sweetener.
Mash 2 very ripe bananas. In a bowl, combine the sifted dry ingredients with 2 eggs and the mashed bananas. Whisk until smooth, then gradually stir in 10 cl skimmed milk.
Divide the batter among 8 silicone or paper muffin cups, filling each about 2/3 full. Sprinkle with 25 g shaved chocolate.
Bake for 15 minutes. Check doneness with a skewer—it should come out clean. Let cool, then serve with a scoop of vanilla ice cream.
