Jet van Nieuwkerk's Simple Banana Pancakes Recipe

Ingredients

  • 1 banana
  • 1 egg
  • 1 egg white
  • 1 tbsp cottage cheese
  • Pinch of cinnamon
  • Coconut oil for frying

Instructions
Mash the banana in a bowl. Add the egg, egg white, cottage cheese, and cinnamon. Stir well until smooth. Heat a dash of coconut oil in a frying pan until very hot. Pour in the batter to form a large, thick pancake and cook until golden on both sides. Serve with a dollop of cottage cheese, fresh fruit, or a drizzle of syrup.
