Recipe by Annemiek:vegan vanilla pudding without packages and bags

You can make this pudding super fast with just a few ingredients. Compared to many other puddings, it contains little fat. And more importantly:it is wonderful and comforting.

You need this

(for 4 people)

  • 200 g sugar
  • 3 tbsp cornflour
  • 1/8 tsp salt
  • 500 ml soy milk
  • 1 tsp vanilla extract
  • red fruit for garnish

This is how you make it

  • In a large saucepan, mix the sugar, cornflour and salt.
  • Gradually mix in the soy milk, keep stirring to avoid lumps. Cook the mixture over low heat until it has thickened, stirring constantly. Cook for another 2-3 minutes, stirring occasionally.
  • Remove the pudding from the heat and add the vanilla. Let cool for 10 minutes and stir occasionally.
  • Pour the pudding into a large serving bowl or small single bowls and let it set in the fridge for 2 to 3 hours.
  • Garnish with red fruit just before serving.
