Difficulty: Easy
Peel the potatoes and place them in a large pot of cold salted water. Bring to a boil and cook for 20 minutes until tender.
Drain the potatoes and mash them with a fork or potato masher. Allow to cool slightly. Stir in the flour until well incorporated.
Beat the 2 whole eggs, 1 egg yolk, and cream together. Add the Greek yogurt, crab meat, salt, and pepper. Fold this mixture into the mashed potatoes to form a smooth batter.
Heat a little butter in a non-stick pan over medium heat. Add a small ladleful (about 2 tablespoons) of batter and cook for 2 minutes on each side until golden and crisp.
Garnish the pancakes with extra crab pieces for an elegant touch.
Make smaller patties for a sophisticated appetizer.
