Preheat the oven to 180°C (thermostat 6).
Wash the apples thoroughly and slice off the tops to create 1 cm thick lids. Core the apples, scooping out the flesh up to two-thirds full with a small spoon. Peel the sweet potatoes and red onions. Dice the sweet potatoes and sweet pepper into small pieces. Slice the onions into thin rings.
Heat the oil in a sauté pan over medium heat. Sauté the vegetables and raisins until the sweet potatoes begin to brown slightly. Season with salt and pepper. Stuff the apples generously with this mixture and arrange in a baking dish.
Bake for 30 to 35 minutes until tender. Remove from the oven and serve warm for a comforting, wholesome dish.
