Authentic Thai Prawn Vermicelli Salad Recipe

Ingredients (Serves 4)
  • 200 g dried soy vermicelli
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon vegetable oil
  • 1 crushed garlic clove
  • 35 g roasted unsalted peanuts
  • A few coriander leaves
  • 2 de-seeded and minced fresh red peppers
  • 1 kg cooked prawns, peeled with tails on
Preparation: 20 minutes
  • Difficulty: Easy

Place the vermicelli in a bowl and cover with boiling water. Once softened and puffed, drain and roughly chop with kitchen scissors.

Whisk the fish sauce, lime juice, and crushed garlic together for a smooth dressing.

In a large bowl, combine the noodles with dry-roasted and coarsely crushed peanuts, onions, coriander, peppers, and prawns. Drizzle with the dressing, toss gently, and serve immediately.
