Ingredients:
- 80 ml vegetable oil
- 1 large white onion, cut into very thin strips
- 2 cloves garlic, cut into thin strips
- 4 fresh red chilies, minced
- 1 kg pumpkin flesh, cut into cubes
- 250 g snow peas
- 1 tsp grated palm sugar or brown sugar
- 60 ml vegetable stock
- 2 tbsp soy sauce
- 1 small bunch purple basil (red basil)
- 4 green onions, sliced
- 75 g unsalted roasted peanuts
- Heat the oil in a wok over medium-high heat. Fry the onion strips in batches until golden brown. Drain on paper towels and set aside.
- In the same wok, cook the garlic and chilies until fragrant. Add the pumpkin cubes and stir-fry until nearly tender and golden. Add snow peas, sugar, stock, and soy sauce. Stir vigorously until snow peas are cooked but still crisp.
- Remove from heat. Stir in basil, green onions, and peanuts. Serve immediately, topped with crispy fried onions.
