Authentic Thai Pumpkin Stir-Fry with Red Basil and Chili

Serves 4

Ingredients:

  • 80 ml vegetable oil
  • 1 large white onion, cut into very thin strips
  • 2 cloves garlic, cut into thin strips
  • 4 fresh red chilies, minced
  • 1 kg pumpkin flesh, cut into cubes
  • 250 g snow peas
  • 1 tsp grated palm sugar or brown sugar
  • 60 ml vegetable stock
  • 2 tbsp soy sauce
  • 1 small bunch purple basil (red basil)
  • 4 green onions, sliced
  • 75 g unsalted roasted peanuts
  1. Heat the oil in a wok over medium-high heat. Fry the onion strips in batches until golden brown. Drain on paper towels and set aside.
  2. In the same wok, cook the garlic and chilies until fragrant. Add the pumpkin cubes and stir-fry until nearly tender and golden. Add snow peas, sugar, stock, and soy sauce. Stir vigorously until snow peas are cooked but still crisp.
  3. Remove from heat. Stir in basil, green onions, and peanuts. Serve immediately, topped with crispy fried onions.
