Preparation
Wash and peel the apples with a peeler, then cut into small cubes. Peel and grate the kohlrabi. In a salad bowl, mix together with shelled walnuts and sesame seeds.
Sprinkle lemon juice over top to prevent browning.
For optimal crispness, prepare the dressing separately: Dissolve 1 tsp sugar in lemon juice, whisk in 4 tbsp walnut oil, then season with salt and pepper to taste. Drizzle just before serving.
