Ingredients for 8 servings

  • 300g wheat
  • 4 small cucumbers
  • 4 Granny Smith apples
  • 1 lemon
  • 130g Emmental cheese
  • Olive oil
  • Chives

Preparation

Bring a saucepan of water to a boil and cook the wheat according to package instructions. Add salt to the water during cooking to infuse the grains with flavor. Drain in a colander once done.

Meanwhile, prepare the fruits and vegetables. Peel the cucumbers if their skin is tough, then slice thinly. Cut three-quarters of the apples into thin strips and toss with lemon juice to prevent browning.

In a large bowl, combine the cooked wheat, apple strips, cucumber slices, and finely chopped chives. Drizzle with 2 tablespoons olive oil. Refrigerate until serving.

Before guests arrive, portion the salad into small individual cups. Slice the remaining apple thinly, alternating strips with Emmental cheese slices on toothpicks. Top each serving with one toothpick.
