Fruit salad is easy to prepare, but excellence comes from balance. For Cyril Lignac, juice is essential—it adds instant tang, sweetness, or depth. He juices a small Corsican grapefruit, infuses it with mortar-crushed aromatic herbs (mint, verbena, and orange-scented lemon balm), stirs in passion fruit pulp, and tops with fresh almonds for crunch.

Cyril Lignac's Irresistible Fruit Salad Recipe

Ingredients for 4 people:

  • 1 punnet of cherries
  • 1 punnet of strawberries
  • 4 apricots
  • 2 peaches
  • 1 Corsican grapefruit
  • 1 passion fruit
  • 1 lemon
  • 1 small bunch of mint leaves
  • A few leaves of verbena and lemon balm
  • 1 handful of fresh or shelled almonds

Preparation steps:

  1. Wash the fruit and cut it into quarters. Remove pits from apricots and peaches.
  2. If you opted for fresh almonds, use a knife to open the shell and remove the almond. Peel the thin skin that surrounds the fruit.
  3. Wash the fresh herbs and cut the Corsican grapefruit in half.
  4. In a container, squeeze the juice from the Corsican grapefruit. With a mortar crush the aromatic herbs. Add the passion fruit.
  5. Grate some lemon zest into the juice. Mix.
  6. In a salad bowl, add the cut fruit and pour over the prepared juice.
  7. Chill for a few minutes then enjoy!
