Gluten-Free and Lactose-Free Pancakes: Schär x La Beauté Parisienne Recipe

1/ In a mixing bowl, whisk together 4 cl rice milk and 2 egg yolks. Add 150 g rice flour and 50 g Schär Mix Pâtisserie flour. Blend into a smooth, fluid batter, then stir in 50 g organic cane sugar, 1 sachet organic baking powder, seeds from 1 vanilla pod, 60 g melted vegetable butter, and a pinch of salt. Refrigerate for at least 20 minutes to rest.

2/ Heat a touch of olive oil in a frying pan. Spoon in two or three small ladles of batter. Cook over low heat for 2 minutes, monitoring closely. Flip when bubbles appear on the surface and cook until golden.

3/ Serve hot with dried fruit, grated coconut, and maple syrup for a delicious topping.
