How to Make Cyril Lignac's Moussaka

Ingredients
- 1kg minced lamb shoulder
- 400g fresh tomatoes, diced
- 1 peeled onion
- 1 clove garlic, peeled
- 1 sprig of thyme
- 3 eggplants, washed
- 10g ground cumin
- 100g grated parmesan cheese
- Olive oil
- Fine salt and ground pepper
Cyril Lignac's Moussaka: Step-by-Step
- In a hot casserole dish, add a drizzle of olive oil and the cumin. Cube two eggplants and cook until lightly browned. Add the chopped onion and cook until golden.
- Add the minced lamb, season with salt and pepper, and cook until it releases juices and caramelizes. Stir in the garlic and thyme.
- Add the diced tomatoes and simmer for 15 minutes. Adjust seasoning with fine salt. Set aside.
- Preheat the oven grill to 240°C.
- Peel the remaining eggplant and slice 0.5cm thick. Season with salt and grill slices in a pan with olive oil.
- Layer eggplant slices in the dish, top with meat mixture, add another layer of eggplant, and finish with grated Parmesan.
- Bake for 6 minutes.
