This classic gratin, often labor-intensive, gets a pro makeover that's quick to prepare without sacrificing its rich, comforting taste. Ground lamb shoulder, fresh diced tomatoes, eggplant, and aromatic cumin create an ultra-satisfying dish perfect for summer Sunday family lunches. Here's how to make it.

How to Make Cyril Lignac's Moussaka

Ingredients

  • 1kg minced lamb shoulder
  • 400g fresh tomatoes, diced
  • 1 peeled onion
  • 1 clove garlic, peeled
  • 1 sprig of thyme
  • 3 eggplants, washed
  • 10g ground cumin
  • 100g grated parmesan cheese
  • Olive oil
  • Fine salt and ground pepper

Cyril Lignac's Moussaka: Step-by-Step

  1. In a hot casserole dish, add a drizzle of olive oil and the cumin. Cube two eggplants and cook until lightly browned. Add the chopped onion and cook until golden.
  2. Add the minced lamb, season with salt and pepper, and cook until it releases juices and caramelizes. Stir in the garlic and thyme.
  3. Add the diced tomatoes and simmer for 15 minutes. Adjust seasoning with fine salt. Set aside.
  4. Preheat the oven grill to 240°C.
  5. Peel the remaining eggplant and slice 0.5cm thick. Season with salt and grill slices in a pan with olive oil.
  6. Layer eggplant slices in the dish, top with meat mixture, add another layer of eggplant, and finish with grated Parmesan.
  7. Bake for 6 minutes.
