This celeriac puree is straightforward to prepare and offers a pure, delicate flavor with mild anise notes. It's an excellent side dish. I used my Magimix at home, but a powerful blender works just as well.

Peel the celeriac with a sharp knife, cut into 2 cm pieces, and steam for 30 minutes until tender.

Once steamed, combine the celeriac, crème fraîche, and olive oil in a blender or food processor. Blend until smooth using a powerful motor. Season with salt and pepper to taste.

Steam the celeriac in the Magimix basket for 30 minutes. Discard the water, add the celeriac and other ingredients to the stainless steel bowl, and process for 3 minutes on the EXPERT program at speed 13.
