Lamb Wraps with Guacamole
Preparation time: 15 minutes (+ 30 minutes marinating time)

Ingredients for 6 large wraps (or 8 medium ones)
– 600 g lamb steak (off the bone, sliced)
– 6 large wraps (or 8 medium ones)
– 2 ripe avocados
– 2 limes
– 1 red onion
– 2 tomatoes
– 1/2 cucumber
– 1 romaine lettuce
– 2 tbsp chopped coriander
– 3 tablespoons olive oil
– 1 level teaspoon chili powder
– 1 level teaspoon ground cumin
– Salt and pepper
Preparation
Mix vinegar, olive oil, chili powder, cumin, salt, and pepper in a bowl to create the marinade. Add the lamb steak slices, cover, and let marinate at room temperature for 30 minutes.
Mash the avocado flesh with a fork and stir in lime juice to taste. Season with salt and chopped coriander. Deseed and dice the tomatoes, cube the cucumber, finely chop the red onion, and wash and shred the romaine lettuce. Arrange all fresh ingredients in separate bowls for easy assembly.
Preheat a dry pan over high heat until smoking hot. Sear the marinated lamb for 90 seconds per side, then lower the heat and cook for another 4 minutes over low heat (adjust for desired doneness: pink or well-done). Season if needed, then rest for 2 minutes.
Warm the wraps in the microwave between two plates.
