Recipe

This authentic Loma Linda cornmeal waffles recipe is a standout from Blue Zones cuisine:

Serves 4 (makes 8 waffles)
Prep time: 15 minutes

For the batter:

  • 125 g wholemeal flour or flour, or a combination of both
  • 80 g corn flour
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 2 tbsp granulated sugar
  • 2 tbsp oil
  • 60 g applesauce
  • 300 ml almond milk
  • 2 tbsp chopped, roasted nuts
  • Chili flakes (optional)

To garnish (your choice):

  • cashew cream*
  • maple syrup with 1/8 tsp salt
  • blackberries
  • granola

*For the cashew cream: Soak 150 g cashew nuts in hot water for at least 3 hours or overnight. Drain and blend with 120 ml water until smooth. Add more water if needed for creamier consistency.

Preparation:

  • In a large bowl, whisk together the whole wheat and corn flour, baking soda, salt, and sugar.
  • Stir in the oil, applesauce, almond milk, nuts, and chili flakes (if using) until just combined.
  • Preheat your waffle iron and lightly grease with cooking spray. Cook waffles for 3-4 minutes until golden.
  • Serve hot with your favorite toppings.
