Nice Recipes – The Cookbook, by Sandra & Eric Waterschoot, €20.99 (New Amsterdam)
Vegetarian snack, serves 4
Prep time: 20 minutes | Oven time: 15 minutes
Ingredients: 4 medium sweet potatoes • 2 tbsp sunflower oil • 1 bell pepper • 1 red onion • 5 tbsp canned corn • 100 g kidney beans • 1 spring onion • 125 ml sour cream • handful of grated cheese • guacamole, to serve • coriander or parsley, to garnish.
Extra needed: mandolin or cheese slicer
Preparation: Preheat the oven to 200°C. Wash the sweet potatoes (leave unpeeled) and slice thinly using a mandolin or cheese slicer. Arrange on an oven rack, brush lightly with oil, and bake for 10 minutes. Work in batches as needed. Meanwhile, dice the bell pepper, chop the red onion, drain the corn and beans, and slice the spring onion into rings. Let slices cool slightly, then preheat oven to 220°C or switch to grill. Layer slices in a baking dish, top with veggies, beans, corn, and spring onion. Dollop sour cream, sprinkle cheese, and bake 5 minutes until golden. Serve with guacamole and garnish with herbs.
Main course, makes 3 burgers
Prep time: 30 minutes
Ingredients: 4 eggs • ½ cucumber • 4 veggie burgers • 4 hamburger buns • 100 g carrot, julienned • 100 g bean sprouts • 8 tbsp peanut or satay sauce • fried onions, to garnish
Preparation: Hard-boil eggs for 8 minutes. Slice cucumber and eggs. Fry veggie burgers in a little butter. Toast buns if desired. Assemble: layer cucumber, carrot, burger, egg, bean sprouts, and sauce on buns. Top with fried onions.
