Easter calls for eggs, and this fried egg on a warm poppy seed bagel with fresh crab salad and samphire is a delightful twist. Simple, flavorful, and ready in 25 minutes for two.

Ingredients
- 2 poppy seed bagels
- 2 eggs
- 150 g crab salad
- 80 g samphire
- Juice of 1/2 lemon
Pantry staples:
- Sunflower oil
- Salt
- Black pepper
- Cayenne pepper

Instructions
- Preheat the oven to 170°C and bake the bagels for 9 minutes.
- Fry the eggs sunny-side up and set aside on a plate.
- In the same pan, briefly sauté the samphire in sunflower oil.
- Top the bagels with crab salad and samphire. Drizzle with lemon juice and a pinch of cayenne pepper. Add the fried eggs and season with salt and black pepper.
