Easter calls for eggs, and this fried egg on a warm poppy seed bagel with fresh crab salad and samphire is a delightful twist. Simple, flavorful, and ready in 25 minutes for two.

Ingredients

  • 2 poppy seed bagels
  • 2 eggs
  • 150 g crab salad
  • 80 g samphire
  • Juice of 1/2 lemon

Pantry staples:

  • Sunflower oil
  • Salt
  • Black pepper
  • Cayenne pepper

Instructions

  1. Preheat the oven to 170°C and bake the bagels for 9 minutes.
  2. Fry the eggs sunny-side up and set aside on a plate.
  3. In the same pan, briefly sauté the samphire in sunflower oil.
  4. Top the bagels with crab salad and samphire. Drizzle with lemon juice and a pinch of cayenne pepper. Add the fried eggs and season with salt and black pepper.
