Ingredients (per person):
- 250 grams baby potatoes
- 100 grams seasoned chicken breast strips (herbs: oregano, parsley, paprika)
- ½ tablespoon olive oil
- 200 grams green beans
- 40 grams wild mushroom pesto
- ½ teaspoon black balsamic vinegar
- Salt and pepper to taste
Instructions:
- Boil 300 ml water per person in a lidded pan. Quarter large baby potatoes and halve small ones; cook covered for 12-15 minutes.
- Meanwhile, trim stem ends from green beans and cut into 2 equal pieces. Add to potatoes after 5 minutes, bring to a boil, then drain and steam uncovered.
- Heat olive oil in a wok or frying pan over medium heat. Fry seasoned chicken breast strips for 5 minutes until golden brown.
- In a bowl, toss baby potatoes, green beans, and chicken with wild mushroom pesto and black balsamic vinegar. Season with salt and pepper if needed. Divide among plates.
