- 500 g ground beef
- 4 eggplants
- 2 tomatoes
- 2 onions
- 1 tablespoon olive oil
- Salt and pepper, to taste
1. Peel and slice the onions.
2. Wash and slice the eggplants into rounds.
3. Rinse and dice the tomatoes.
4. In a large skillet, heat the olive oil. Sauté the eggplant slices for a few minutes until lightly browned, then transfer to a baking dish.
5. Preheat the oven to 200°C (390°F).
6. In the same skillet over high heat, brown the onions and ground beef. Once seared, add the tomatoes, salt, and pepper. Simmer for 10 minutes.
7. Pour the meat mixture over the eggplants in the baking dish and add ½ glass of water.
