January 6 marks Epiphany, and it's time for my traditional apple galette des rois. This homemade version is such a hit, even the Three Kings would approve!
After two years of disappointment with store-bought galettes des rois from supermarkets—often bland and overpriced—I've perfected my own. As the saying goes, 'You're never better served than by yourself.' Here's my reliable recipe for a delicious apple-filled galette des rois.
Ingredients (Serves 8)
- 2 rolls of ready-to-unroll puff pastry
- 800g unsweetened canned apple puree
- 4 tablespoons brown sugar
- 2 apples
- 1 egg yolk
Preheat your oven to 200°C. In a mixing bowl, combine the apple puree with the brown sugar until smooth.
Fit one puff pastry into a pie dish, pressing it into the bottom and up the sides. Prick the dough all over with a fork to ensure even baking.
Peel and slice the apples, then arrange them evenly over the base. Pour the sweetened apple puree on top and hide the fève (bean/charm) inside.
Top with the second puff pastry sheet. Seal by pinching the edges together and folding them inward.
Brush the top with egg yolk for a golden shine, then score decorative patterns with a knife.
Bake for 40 minutes until golden brown, watching closely for even coloring.
