Gourmet Smoked Halibut Omelette with Toasted Almonds and Tahitian Vanilla Salt

  • 50g flaked white almonds
  • 50 cl whipping cream
  • 50g butter
  • Salt, pepper, and Tahitian vanilla salt
  • 250g smoked halibut

Beat the eggs with a fork together with the whipping cream, pepper, and salt to taste.

Heat the butter in a heavy-bottomed frying pan and pour in the egg mixture.

When the eggs begin to set, distribute small slices of smoked halibut evenly across the surface.

When the omelette is partially set and still slightly runny, sprinkle with toasted slivered almonds. Finish with a pinch of Tahitian vanilla salt.
