Ingredients for 4 people
Prepare the day before:
Slice the onions and red cabbage into thin strips, then quarter the apples.
In a baking dish, layer the onions, cabbage, and apple quarters. Season with salt, pepper, and brown sugar. Moisten with 30cl red wine, and bake at thermostat 3 (130°C) for 3 hours.
On the day:
Preheat the oven to the same settings and roast the 4 turkey fillets.
Meanwhile, whisk the egg with the spices. Brush the roasted fillets with this mixture.
When serving:
Prepare the sauce just before serving to keep it hot. In a saucepan, reduce the remaining red wine while melting the chocolate in a bain-marie.
Off the heat, gently incorporate the melted chocolate into the reduced wine.
Brown the fillets in a pan, then drizzle with the sauce right before serving.
