Turkey fillets with chocolate sauce

Ingredients for 4 people

  • 4 turkey cutlets
  • 2 onions
  • 2 apples
  • ½ red cabbage
  • 60g brown sugar
  • 220g of butter
  • 1l of red wine
  • spices:cinnamon, nutmeg, ginger
  • 60g dark chocolate
  • 1 egg
  • sweet potatoes

To prepare the day before the meal:

Cut the onions and red cabbage into strips, then slice each on their side. Also cut the apples into quarters.

In a mold, then insert your onions, your cabbage and your apple quarters. Add salt, pepper and sugar. Moisten everything with 30cl of red wine, and cook at thermostat 3, 130°C for 3 hours.

To be prepared the same day:

Turn on your oven on the same settings as the day before, and cook your 4 turkey fillets.

Meanwhile, mix the eggs with the spices. Once the fillets are out of the oven, brush them with this mixture.

When serving:

It is best to prepare the sauce just before serving to keep it piping hot.

In a saucepan, reduce the rest of the red wine, while the chocolate is melting in a bain-marie.

Once both are removed from the heat, gently add the chocolate to the wine.

Brown your fillets in the pan, then drizzle them with the sauce just before serving
