  • Ingredients for 8 servings: 1 kg small mackerels, 2 lemons, 1 bottle Rully wine, 4 onions, salt, ground pepper, thyme, bay leaf.
  • Prep & cook time: 30 minutes
  • Select 1 kg fresh small Dieppe mackerels, known as "Lisettes." Gut them without removing heads, wash thoroughly, and pat dry with a clean cloth.
  • Wash lemons and slice thinly.
  • Layer fish head-to-tail in a heatproof dish, alternating with lemon slices.
  • In a saucepan over low heat, warm the young, dry white Rully wine. Add peeled, finely chopped onions, salt, ground pepper, thyme sprig, and half a bay leaf. Reduce by one-third.
  • Pour boiling mixture over fish. Simmer dish briefly with 2-3 bubbles. Cool completely in the dish.
  • Serve chilled.
