Peel and finely chop the shallots. Heat oil in a pan over high heat and sear the steaks to your desired doneness. Season with salt and pepper.
Transfer the steaks to a baking dish, cover with foil, and keep warm in a low oven.
Deglaze the pan with a splash of water. Add the shallots and some butter, reducing by half. Stir in the red wine to make the sauce.
When ready to serve, generously coat the steaks with the sauce.
