Ingredients
- 500 g canned young jackfruit, drained weight
- 1 tsp smoked paprika
- 1 tsp cumin powder
- 1 tsp curry powder
- 100 ml vegan BBQ sauce
- 1 tbsp olive oil
- 1 large onion, finely chopped
- 3 cloves garlic, finely chopped
- Salt and pepper, to taste
- 4 sandwiches of your choice
- 1 apple, thinly sliced
- 100 g fresh red cabbage, in thin strips
- Garnish (optional): Fresh coriander
Preparation
- Preheat the oven to 180°C.
- Pull apart the jackfruit pieces with your hands, rinse thoroughly under cold water, and place in a bowl.
- Add smoked paprika, cumin powder, curry powder, and BBQ sauce. Stir well, cover with plastic wrap, and set aside to let the flavors infuse.
- Heat olive oil in a skillet and sauté onion and garlic for 3-4 minutes until softened.
- Add the jackfruit mixture and cook for 5 minutes over medium heat, stirring regularly. Season with salt and pepper.
- Transfer to an oven dish and bake for 7 minutes.
- Slice open the sandwiches, pile on the BBQ jackfruit, and top with apple slices, red cabbage strips, and optional fresh coriander.
