Ingredients

  • 500 g canned young jackfruit, drained weight
  • 1 tsp smoked paprika
  • 1 tsp cumin powder
  • 1 tsp curry powder
  • 100 ml vegan BBQ sauce
  • 1 tbsp olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, finely chopped
  • Salt and pepper, to taste
  • 4 sandwiches of your choice
  • 1 apple, thinly sliced
  • 100 g fresh red cabbage, in thin strips
  • Garnish (optional): Fresh coriander

Preparation

  1. Preheat the oven to 180°C.
  2. Pull apart the jackfruit pieces with your hands, rinse thoroughly under cold water, and place in a bowl.
  3. Add smoked paprika, cumin powder, curry powder, and BBQ sauce. Stir well, cover with plastic wrap, and set aside to let the flavors infuse.
  4. Heat olive oil in a skillet and sauté onion and garlic for 3-4 minutes until softened.
  5. Add the jackfruit mixture and cook for 5 minutes over medium heat, stirring regularly. Season with salt and pepper.
  6. Transfer to an oven dish and bake for 7 minutes.
  7. Slice open the sandwiches, pile on the BBQ jackfruit, and top with apple slices, red cabbage strips, and optional fresh coriander.
