Potato Roses with Radish Dip

Ingredients for 6-7 roses:
750 g waxy potatoes
150 g cottage cheese (20% fat)
½ bunch radishes
½ clove garlic
Juice of 1 lemon
Salt and pepper

Preparation:
Preheat oven to 170°C (convection). Line a muffin tin with baking paper. Peel potatoes and slice thinly (1-2 mm) using a mandoline or grater—slices should be translucent when held to light.
Arrange about 20 slices in a row, overlapping by half. Roll from one end to form the rose center. Hold in one hand and wrap additional slices around until it fits the muffin cup snugly. Place in tin, season with salt and pepper, and repeat. Bake 45 minutes until tender inside and golden outside.
For the dip: Finely chop ½ bunch radishes and ½ garlic clove. Mix with cottage cheese, season with salt, pepper, and lemon juice. Stir well and serve alongside the roses.
