Recipe: Master Cyril Lignac's Gourmet Hummus

Preparation time: 12 minutes
Serves: 4

Ingredients:

  • 200g cooked chickpeas
  • 2 cloves of garlic, peeled and minced
  • 1 small green chilli, seeded and mashed
  • 8 cl of tahini sauce
  • 1 lemon juice
  • 1 tablespoon chopped flat-leaf parsley
  • A few pine nuts
  • 2 tablespoons of olive oil
  • Fine salt

Preparation Steps:

  1. Keep aside 2 tablespoons of chickpeas for garnish.
  2. Pour the rest of the chickpeas into the blender and start blending.
  3. Pour in the mashed garlic, the chilli then a pinch of salt, the tahini sauce and the lemon juice. Mix then pour into the serving dish.
  4. Make a wave with a spoon, pour in the olive oil, sprinkle with fine salt and parsley, add the pine nuts and finish with the whole chickpeas.
  5. Enjoy with pita breads.
