Fish and chips from Cyril Lignac:a tasty and crispy recipe just the way we like it!

Want a quick and tasty dish to make? Chef Cyril Lignac has its special recipe, that of fish and chips ! A real institution in England for a hundred years, this breaded and fried fish , accompanied by fries, treats young and old as it is good. What makes it special, the tender flesh of the fish and its crispy fine breadcrumbs.

Fish and chips by Cyril Lignac:a tasty and much less greasy recipe

We're not going to lie to each other fish and chips it's fat, it's caloric (nearly 255 calories per 100 g). However, it can be easily prepared using less rich ingredients. In his recipe chef Cyril Lignac uses tricks and favors healthier alternatives:to obtain a soft and less greasy donut dough he incorporates cottage cheese and to fry fish he recommends grapeseed oil, which is much healthier than frying oil classic. And because fish and chips are traditionally served with a sauce, Cyril Lignac makes a creamy sauce that has nothing to envy to tartar sauce. Here again, he uses cottage cheese, a little crème fraîche, lime juice to give it a boost and herbs (garlic, shallot and chives) to season everything.

Cyril Lignac's easy fish and chips recipe

For 4 people you will need:

  • 4 cod fillets
  • 100g flour
  • 15g baking powder
  • 50g cornstarch
  • 75g cottage cheese
  • 1 egg
  • 12 cl of water
  • 3 tablespoons cottage cheese
  • 2 spoonfuls of fresh cream
  • 1 shallot
  • 1 clove of garlic
  • 1 lime
  • A few sprigs of chives
  • Grape seed oil

Preparation steps:

  1. In a bowl, mix the flour, baking powder, cornstarch, cottage cheese, egg and water until you get a fluffy donut dough.
  2. Dip the fish in the batter on both sides.
  3. In a saucepan, heat the hot grapeseed oil to 180°C.
  4. Dip the pieces of fish in it and let them fry and brown for 5 minutes. Turn them over and drain them on absorbent paper to remove excess oil.
  5. Chop the shallot, chives and garlic. Reserve.
  6. In a bowl, mix 3 tablespoons of fromage blanc, 2 tablespoons of fresh cream, the juice of a lime, the shallot, the chives and the chopped garlic. You get a fresh and creamy sauce for your fish, which changes from the classic tartar sauce.
  7. On a plate place your fish and chips then add the sauce next to it. Enjoy!
