For the sauce, he skips tartar for a fresh version with cottage cheese, a touch of crème fraîche, zesty lime juice, and aromatic herbs like garlic, shallot, and chives.

Cyril Lignac's Simple Fish and Chips Recipe

For 4 people you will need:

  • 4 cod fillets
  • 100g flour
  • 15g baking powder
  • 50g cornstarch
  • 75g cottage cheese
  • 1 egg
  • 12 cl of water
  • 3 tablespoons cottage cheese
  • 2 spoonfuls of fresh cream
  • 1 shallot
  • 1 clove of garlic
  • 1 lime
  • A few sprigs of chives
  • Grape seed oil

Preparation steps:

  1. In a bowl, mix the flour, baking powder, cornstarch, cottage cheese, egg, and water to form a light, fluffy batter.
  2. Coat the fish fillets in the batter on both sides.
  3. In a saucepan, heat grapeseed oil to 180°C.
  4. Fry the battered fish for 5 minutes until golden, turning once. Drain on absorbent paper to remove excess oil.
  5. Finely chop the shallot, chives, and garlic. Set aside.
  6. In a bowl, combine 3 tablespoons cottage cheese, 2 tablespoons crème fraîche, lime juice, chopped shallot, chives, and garlic for a fresh, creamy sauce that rivals tartar.
  7. Serve the fish and chips with the sauce on the side. Enjoy!
